BBQ Portobello Burgers with Sautéed Zucchinis or Vegan Sloppy Joes

Want burgers with a twist? No problem! This recipe will have the whole family asking for more!
1- Four whole-wheat hamburger buns

2- Four Portobello mushrooms

3- Two yellow zucchinis

4- Four large tomato slices

5- Four tablespoons of your favourite BBQ sauce

6- One tablespoon of olive oil

Cooking instructions
1- Pull the stems out of the Portobello mushrooms. Chop both the zucchinis and the stems to make one-inch pieces. In a pan, heat the olive oil and add the mushroom stems and the zucchinis. Fry until golden brown. Add the BBQ sauce and continue to heat for about five minutes. Set aside.

2- In the same pan, heat the Portobello mushrooms until soft, so about five minutes in total – half the time on each side.

3- Quickly heat the buns either in the microwave or in a pan with a dab of oil buttered on the bun itself.

4- Serve while it’s hot!
